This Daiginjo sake is made from Yamadanishiki rice grown in Yoshikawa Ward in Joetsu City, Niigata, and milled down to 40% volume. With the rich umami of Yamada Nishiki rice and a brief aftertaste, this sake goes down incredibly smoothly. It also has a nice acidity for a refreshing aftertaste. Gohyakumangoku rice from Yoshikawa Ward in Joetsu City, Niigata has been milled down to the Ginjo level of 55% for this sake. The kakemai (steamed rice) is also Gohyakumangoku. This sake is smooth and refreshing, but the umami of the rice is also prominent. Experience the magnificence of Yoshikawa Gohyakumangoku rice with this sake.

Junmai-shu "Arigtashi(Yamadanishiki)" 720ml

Pruduct Detail

This sake is made with 90% polished rice, an unusual ratio in the sake brewing industry. This is unknown territory for everyone. Everything from washing the rice to adding water, steaming rice, and making the koji had to be done in a completely different way, but Yoshikawa brewers were able to use their traditional techniques to overcome many obstacles. With great attention to detail, they have created a sake that's never existed before. The rich umami and the sweetness of rice. A solid acidity rises out of a strong, rich flavor, then dissipates in a perfect transition. This novel and delicious flavor is the complete opposite of "light and dry." The strong taste of the Yoshikawa Yamada Nishiki rice we are so proud of has been transferred in its pure form to this new type of sake.

Umeshu "Junmai Umeshu" 720ml

Product Detail

Junmai Umeshu was created by combining the 100% Yamada Nishiki sake "Arigatashi Undiluted Sake" with "koshi no ume" Japanese plums grown in Nadachi, Joetsu and specially certified by Niigata Prefecture to produce first-rate flavor. The result is joyfully refreshing with a comfortable acidity. Full umami with mild sweetness. It is a very elegant and refined taste.

Brewery Detail

This local Niigata sake is made with a focus on rice, water, and technique. Yoshikawa Toji no Sato is a place that has produced many sake brewers. They use rice cultivated on the best fields in Niigata, and from here this rice is distributed to other famous sake breweries in the prefecture. The water used to brew the sake is from a spring in a Japanese beech forest in Ogamidake, making this a true local sake. One of Japan's few sake brewing schools, the Niigata Prefecture Yoshikawa High School Sake Brewing School, has also been operating here for around 50 years.
